摘 要
白果中含有氢氰酸,食用过多会引起不适,甚至中毒[1],本论文综述了近年来关于氢氰酸研究进展，并对提取方法进行了整理与归纳。并着重研究不同生长时期对白果中氢氰酸的含量的动态变化。

Abstract
Ginkgo contains hydrocyanic acid, Eating too much ginkgo are responsible for discomfort or poisoning .This paper summarize the research progress of hydrocyanic acid in recent years and extraction method.Objective To extract and determine the content of hydrocyanic acid at different times and crop strains.

前言
氢氰酸分子为极性分子。可以抑制呼吸酶，造成细胞内窒息，有剧毒，在银杏、木薯[2]等植物中含有少量氢氰酸。近几年随着人们对健康的追求银杏产业快速发展，但白果中氢氰酸的存在成为制约其发展的重要问题，由银杏种胚中含有氢氰酸,食用过多会引起不适,甚至中毒[1],因而对不同时期白果中氢氰酸含量测定就极为重要。
